Pickled Blueberries with Saffron 200g

Using fantastic local blueberries from the Victorian High Country, we pickle them with red wine vinegar, bay, saffron and cardamom.
This pickle is lovely and herbaceous, perfect with rich meats like venison and roast beef, or can be used with blue cheese, goats’ cheese or those stinky washed rinds.
If you're looking for something different, try it drizzled over good vanilla ice-cream or on panna cotta.
