Hand picked and wild fermented in the Mediterranean tradition. Our Australian olives are fermented for a minimum of 18 months in natural spring water and Australian kiln-dried sea salt, this process allows us to remove all the bitterness, while preserving the natural flavour of the olive. Ensuring we bring the beautiful to your kitchen.
Sourced from unirrigated groves in the Victorian High Country, as our estate trees are still coming into maturity at 10 years old. We grow 8 dedicated table olives varieties, including: Kalamata and Koroneiki from Greece, Manzanillo, Hojiblanca and Sevillano from Spain and Azapa from Chile. Our olives are flavoured, where possible with estate grown herbs and spices, including saffron, lemon myrtle, bay laurel, lemon, chilli and basil.

Kalamata – Wild Fermented Olives
Our Kalamata olives are picked on turn, some fruit will be black, some blonde. Great medium sized fruit, with thin skin and rich olive flavour.
The classic olive, perfect in a Greek salad or tossed through Spaghetti alla puttanesca.

Lemon Myrtle and Saffron – Wild Fermented Olives
Our manzanillo are picked green, ensuring bold and robust flavours are maintained. They have great crunch, with delicate herbaceous citrus notes from the lemon myrtle, while the saffron enables the natural olive flavour to really shine.

Original – Wild Fermented Olives
Our original olives try to capture the true characteristics of the variety, bringing an authentic experience to your kitchen table. We use different olives as they become available, so you can always expect unique experience.
Currently we have a blend of 4 different varieties of olives, including Manzanillo, Sevillano, UC13, Coratina. They have been fermented for a minimum of 3 years, allowing you to taste the true nature of these different olives.

Summertime - Wild Fermented Olives
A blend of olives flavoured with bay, lemon and cloves, these olives are a great treat. The clove and bay brings the warms of summer, while the lemon brings a little subtle brightness. Perfect in salads or cooking, they also go superbly with a beer.
Current varieties included are Barnea and Coratina.

Summertime - Wild Fermented Olives
When olives start to change colour to black, but don’t have a chance to fully ripen, they’re called blonde olives, as the skin pigment is lost during the fermentation, but they maintain some of those sweeter ripe flavour characteristics.
Our Spicy Blonde olives are such olives, flavoured with estate grown basil, garlic and chilli, they have a bright vibrate flavour, perfect for summer salads, pasta and eating straight out of the pack.
They are a blend of different varieties, some small olives like Koroneiki others big like Wallace. Find your favourite!
